This is such a simple recipe.Just me eating,so below is enough to make two medium sized pancakes for one person.
1/3 cup of your preferred flour
1/3 cup of soya milk
1 tsp baking powder
1 tsp of vanilla or almond essence
Thats it! Mix the above ingredients together with a hand whisk until there are no lumps.
Heat coconut oil (just a light coating ) in the pan, once good and hot, add half of your batter mix, make sure you tip the pan to ensure the batter covers the base. Once air bubbles start to form, you should be able to lift and turn. Cook until you are happy with the colour.
Take off the heat and add your filling. Tonight I had black cherries, agarve nectar, lemon juice then I sprinkled with goji berries and played with the choc shot.
