Baking tonight

Time for a treat, so tonight I made some protein flapjacks and just 6 Cocoa cupcakes.

This is the healthy one-To make the flapjacks, use your favourite flapjack recipe, but half the amount of oats and make up the remainder using seeds and nuts. Tonight I used Omega 3 mix and The Food Doctor Seed and Bean mix. Because of the nature of the mix, you will not get nice even squares, so just go for the rustic look. Top with Choc Shot and coconut.

This is the not so healthy- To make the  cupcakes,25gms Coconut oil, 75gms Pure soya, 50gms soft brown sugar, 2 table spoons Algarve Nectar, almond essence, 100gms of whatever flour you prefer, 1 tsp baking powder, 2 tbls Cocoa powder. Thats it! Mix really well, I do mine by hand and spent about 5 minutes mixing. Always worth a bit of time then you get a good rise and a lovely light cake. Topped with Choc shot and coconut. Bit of a theme going on here tonight.

And for anyone interested. Flapjacks- As I did a lot of free hand when it came to quantities, it was a little difficult to work out the calories on this. So this is approximate. Calories 133 each piece. Fat 7gms, Carbs 14gms, Protein 4gms.
