I fancied a curry tonight. If we have a take away, I always feel so bad as I can never eat the amount they give me, even just ordering a veg dish and rice, it is always too big, and unfortunately it never really tastes so great the next day. So a quick and easy chickpea curry, with rice and plenty of veggies. This looks like a huge dinner, but the bowl is only about 7 inches across and quite shallow.But a perfect portion for me.
I nearly always steam my vegetables, you keep so much more of the nutrients cooking this way or eating raw. Boiling veggies is a bad move as most of the goodness is potentially cooked out of them and then tipped down the sink.
Broccoli is a bit of a super-food (sorry for using that term) it contains vitamin K, C, B6, E, B1. It is a great source of dietary fiber,omega-3 fatty acids, protein, zinc, calcium, iron plus so much more. I eat a lot of it, it is so good for you.
