Celeriac, something I hadn’t had for years.

From the garden at work, so freshly picked and eaten within a few hours. I decided to slice the celeriac and roast it, sprinkled with pepper, garlic and some liquid smoke. I then spiralized 1 carrot, 1 courgette and 1 parsnip. I didn’t want to eat them raw, so put them in a roasting tin and baked. Then I cooked some mushrooms and made a peanut sauce, it all worked really well together. I even added some mango on top. I made enough for lunch tomorrow.Celeriac1
