Scrambled Tofu for lunch

This is a very healthy lunch and also very easy. Ingredients

Scrambled tofu

Spray pan with Fry Light Coconut oil then add 1/2 block of firm tofu, crumbled. Add garlic, a pinch of Turmeric (this gives it the yellow colour of eggs) add whatever herbs you are going to use, today I used Tarragon(my favourite) and sprinkled a little mild chilli powder and paprika. 1/2 tsp of black salt, add a splash of soya milk. Then a handful of Samphire and 6 baby plum tomatoes. Meantime heat up a portion of baked beans, mushrooms if you have them and a hash brown or two if you like them, or anything else you fancy to have with this.I had a little Sheese Wensleydale and Cranberry left, so that went on top too. Yesterday I made bread, so I toasted 2 slices to top off my meal.
