Chocolate Muffins REVISED Recipe

 

I decided to adjust my recipe, so here is the new version.

1 cup of flour

1/2 cup of raw cocoa powder

1 tsp baking powder

1/2 cup of light brown sugar

Pinch of salt

3/4 cup of almond milk

1/4 cup of coconut oil (melted)

1/2 tsp of either vanilla or almond extract

Mix all the dry ingredients, then add wet ingredients. Mix until smooth and creamy. I split this between 6 cake holders, but you could stretch it to 8.

Place in a hot oven.  200 c. Bake for about 16 minutes. Transfer to a rack and leave to cool. I topped these with cocoa powder and icing sugar and mixed with almond milk.

I have been trying to get a nice moist cake without adding too much oil . This is almost there. These are delicious served up with nicecream or yogurt. Note they are very rich, dark chocolate flavour.

Calories193 each cake,carbs 23gms, fat 11 gms, protein 4gms.

Maybe you should make 8!!! Then just 144 calories each cake. Enjoy!
