Tonight, I had no plan at all for dinner. I realised I had some leeks, carrots, peas and broccoli left from yesterday which was in cauliflower sauce, so that was my starting point. I heated that up, added 2 falafels, an avocado, 3 baby plum tomatoes and 3 black grapes, sprinkled samphire over the top, 2 slithers of Violife mozzarella and toasted 2 pieces of the small loaf I made Saturday. So there it is a lovely tasty nourishing plate of goodness. If you always keep good healthy choices in your fridge and store cupboard, you are always going to be able to eat well. This took 10 minutes to put together.

The majority of the calories in this came from the avocado, then the falafel then the bread. The fat is healthy fat frim mainly the avocado.
