Yet another very simple dinner. I baked 3 different proteins this evening when I first arrived home from work. Tofu, quorn pieces and Linda McCartney sausages. This is so I have a choice in the fridge for a few days.
I decided to make spaghetti, 1 carrot, 1 courgette through the spiralizer. I prefer to have the veggies lightly cooked, either in a wok or as I did tonight on a baking tray.
Raw carrots & courgette sprinkled with garlic and a little coconut spray oil.Then separately I cooked mushrooms with tomatoes and onion with yet more garlic and basil. Once everything was ready I cut up the two sausages I had cooked earlier and added to the mushrooms. This actually made enough for two meals.
If you are interested, this is very low calorie especially as I split it in 2. Obviously you can adjust the quantities to suit. But this is for what I used tonight.
