
Another very simple recipe.
1 sweet potato
400 gms green lentils
1/2 onion chopped
6 mushrooms sliced
orange pepper- just a couple of slices diced
2 carrots
garlic
Basil
tomato puree
6 baby plum tomatoes
1 veg stock cube made into 200ml of stock

Saute the onions, then add everything else and leave to cook for 15 minutes, stirring occasionally. Meanwhile peel the sweet potato and boil. Once cooked, mash and add a little Pure or salt and pepper. Entirely up to your own taste preference.

Put the lentil mix into the bottom of the pie dish, then either spoon or pipe the potatoes on top. If you wish add a little grated Violife and place in the oven. Bake for 20 minutes maximum. Then enjoy!
