I had originally planned on spaghetti with pesto sauce and tofu. However although my cupboards are bulging with ingredients, sadly there was no spaghetti, so second choice, Durum wheat pasta.


Simple, chop one courgette, about 8 mushrooms sliced, a cup of diced sweet potatoes and butternut squash, chopped garlic, 1 cup of tomato, onion and basil sauce, about 100 gms of precooked tofu and Quorn pieces mixed and a cup of pasta.
I didn’t use oil, just a splash of water add the garlic, place all the veggies into the pan and saute on top of the oven, after 5 minutes add the sauce leave to cook for 10 minutes then add the tofu and quorn. Meanwhile, bring some water to the boil and cook the pasta. When ready transfer both to a dish, and mix. Top with grated Violife and place under the grill to melt.
I added a portion of peas, just because I love peas and they are very good for you. Simple and for anyone interested.The complete dish totals:
Calories 504 calories, 31 gms Protein, 27 gms fat, 72 gms carbs. However, this was actually enough for me for dinner and lunch tomorrow. The peas just add 40 calories but a huge 3 gms of extra protein, no fat and 4 gms of carbs.
And to finish off. I had a bowl filled with Dragonfruit, pineapple,grapes, and trimmings.
