Another 30 Minute Dinner Idea.

This is another quick, easy healthy dinner idea.

After a long week, you do not want to be standing over the cooker for ages making dinner on a Friday evening. As soon as you get home, turn the oven on to heat up. 180 degrees. Peel a sweet potato and cut into fries. I realised half way through that I wasn’t using my waffle cutter, so some are crinkle cut some are straight. Spray a baking sheet with Fry Light olive oil or coconut oil. Sprinkle with your favourite herbs and spices and chopped garlic, put the sweet potatoes in the tray and shake it and turn them over so they are coated with the herbs. Place the tray into the oven to bake. Approximately 25 minutes.

Meanwhile, in my fridge I had some of the vegetables I spiralized a couple of nights ago, so I added a handful to the baking tray. I had a pot of 3 bean chilli which I heated up in a small saucepan. I had some chopped rainbow salad all ready to use which I poured a little balsamic vinegar over,  a few plum tomatoes, a couple of grapes, a couple of olives, 2 falafels and a few slithers of Violife Mozzarella style (I used my waffle cutter again….new toy. ) Add the sweet potato chips and there you have a very healthy, tasty dinner ready in 30 minutes. Sit your tired self down and enjoy!
