I wanted to make some biscuits today and decided on a larger version of the good old Iced Gems. So easy.
75 gms of vegan butter- I always use Soya Pure.
2 Tbsp of Golden Caster sugar
125 gms of whatever your favourite flour is.
1 tsp of either vanilla or almond essence.
Cream the Pure and sugar together, sieve the flour into the bowl and mix until it forms a dough.
Roll out and cut into small biscuits. I used a small flower cutter and made 24. Calories below are based on this quantity.


Put into a pre heated oven at 180 for 10-12 minutes.
Meanwhile make the Royal Icing. This is usually made using egg whites, so instead I used aquafaba, if you have never heard of this before, next time you open a tin of chickpeas, keep the water they are in. This is the aquafaba, treat it like egg white and with an electric mixer beat it until it is thick and frothy. You only need about a 1/3rd of the fluid from a 400 gm tin. Once it has thickened add about 150 gms of whatever Icing sugar you use. Mix until it stands in peaks without collapsing.
Add vegan food colour if you wish and using a piping bag put the flower on the top. Delicious served with Alpro icecream.

Each iced gems is about 70 calories, these are a treat only. They do not offer anything nutritionally, but are nice occasionally.
