When you have been at work all day and have not prepared something for your dinner ahead of time, then a 30 minute meal is a life saver.
Peel one large sweet potato, cut into small chunks and place in a saucepan with water and bring to the boil. Once ready, add 1/4 cup of soya milk, a tsp of Pure, pepper and salt and using a potato masher, mash until smooth and creamy.
Separately in a pan, chop 1/4 an onion, add a splash of water, a clove of garlic chopped, any other seasoning you like. Add 1/3 can of chopped tomatoes and about 80 gms of Quorn Vegan pieces and whatever beans you have, kidney, borlotti , chickpeas and bring to a simmer.
Steam some broccoli and carrots. That is it, all ready at the same time. Dish up and enjoy!
