I had such a busy week last week, so I didn’t manage to put any meal ideas or recipes up. So here is a nice quick and easy one to get things going again.
Chop half an onion, add 1 clove of garlic chopped and 1 tsp of chilli powder. Your preference here, depending on how hot you like your chilli.

Saute for a few minutes then add some chopped tomatoes, I had 1/2 a can in the fridge, sliced mushroom about 1 cup.

Then I added about 1 cup of kidney beans and a can of Kala Chana, (brown Chickpeas) if you havent tried these, give them a go. They are smaller than regular chickpeas and have a lovely nutty flavour.

After it had been simmering for about 10 minutes, I added a spoon of Raw Cocoa Powder. If I had 85% chocolate in the cupboard I would have put 2 pieces in, but I have to admit I ate what was there over the weekend. But raw cocoa powder works well. Leave to simmer for another 5 minutes…..Ready!

And as always, for anyone interested.
Calories. 428, Fat 10 gms, Carbs 50 gms, Protein 17 gms.
However this was enough for me to make into two portions, so lunch tomorrow.
