1 Butternut Squash, 1 Carrot, 1 Parsnip…Make 3 meals.

Take one medium sized Butternut squash. 1 large carrot and 1 parsnip, cut all 3 into chuncks. Place in a pan with about 1cm cold water, 1 clove of garlic, whatever herbs you like, I used Coriander and Basil. Add tomato puree and simmer. You may need to add a little more water and then crumble a vegetable stock cube into the mix.

I have a wonderful bonus at the moment of a Buddhas Hand, grown at work in the greenhouses. I am making the most of this at the moment, grated onto my salads and on this occasion into my pan mix. It has a citrus smell, not quite like a lemon, but definite citrus. When grated it has quite a tangy perfume taste, hard to describe, but lovely.

This simmered for about 10 minutes. Leave it to cool for a little while, then I took half of the contents of the pan and put it into the Nutribullet with about 75ml of Unsweetened Soya milk and blitz it up. This made a nice thick puree, which has been put into a pot and into the fridge. 1/3rd of this will be used to make a sauce for either a pasta dish or a cauliflower shease sauce. The rest will be made into a soup to have with toasted Rye Bread.

The rest was left in chunks to make a lasagne.

I used Free and Easy to make the sauce, but you can make your own using Cashew Nuts, garlic, Nutritional yeast. But I went for speed. 3 Tablespoons of powder mixed with a little water to make a paste, then stir and mix into 250ml of water. Place in a pan and slowly bring to the boil. It will start to thicken, so keep stirring.

Cover the base of your dish with the Butternut Squash mix, then add some of your preferred lasagne sheets, there are so many options out there. Pour over some of the sauce mix, grate a little Violife Mozzarella style. Then do it again until you have used all your mix. End with a sauce top and more grated Violife.

Bake for about 30 minutes until the lasagne is cooked.

Serve with salad, and enjoy.

You could add soya protein to this recipe or just protein powder, as it is above it only has about 12 gms of protein, 90 gms of carbs, 5 gms fat and approximately 520 calories.
