Carrot Spaghetti and Chili Beans and Lentils

Put 2 tablespoons of water in a flat bottomed pan, add garlic. Spiralize one carrot, add this to the pan, add half a chopped onion, 1 can of green lentils and half a can of kidney beans.

Leave to simmer for a couple of minutes, then add I tablespoon of tomato puree, 1 teaspoon of chili powder, a little more water, black pepper and salt to taste. Leave for another 10 minutes. Then it is done.

This was enough to split into two portions.  Fot the whole amount.

Calories-311, Fat-2.3gms, Carbs-48 gms, Protein-17gms.

So when I came home tonight, I took one portion from the fridge, heated it up and served it with rainbow salad, avocado and beetroot.
