Yet another easy treat. You will need approximately 1 cup of Mango puree, so if they are in season get peeling, if not you should be able to find Mango puree in a tin.
1 1/2 cups of your preferred flour
2 tsps of Baking Powder or Egg replacement
pinch of salt, 1 tsp ginger
1/2 cup of brown sugar/coconut sugar/or agave nectar. Which ever you prefer.
Put all of the above in a bowl and mix well.
1 cup of mango puree
4 Tablespoons of Coconut Oil/ Canola or whichever oil you prefer.
3 tablespoons of water, 2 tablespoons of Soya milk, 1 tsp of Vanilla extract
Mix the wet ingredients together well and then beat into the dry mix, keep mixing until everything is fully combined.
Divide equally into muffin cases and bake for 15 minutes.

The batter has a wonderful golden yellow colour and this colour stays through cooking.
Whilst cooking, make a syrup to pour over the top. A couple of tablespoons of Mango puree mixed with your preferred icing sugar.

Once cooked and cool, drizzle the syrup over the top. Serve with icecream, cream or yogurt. (all vegan of course)
As these are only a treat, their nutritional info is not too important, but ok… Each m uffin is approximately 140 calories, 6gm fat, 1 gm protein and 20 gms of carbs.
This is based on what I used. I had them with Alpro cocconut and cornflower petals and a little cherry syrup.
