I always seem to say this, but this is a very easy and quick meal to prepare. (Sorry for quality of photos).

1/2 Block of firm Tofu. I use the base and one level of my steamer to drain and break the tofu up ahead of cooking.
Place chopped onion, chopped mushrooms and garlic into a little coconut oil to simmer. Then add the scrambled tofu, after 5 minutes, add 1/4 teaspoon of Turmeric and a pinch of black salt, stir to allow the tofu to change colour with the turmeric. leave to simmer.
Meanwhile, steam some peas and beans or whatever veggies you have and toast a slice of rye bread.
Put the rye bread on your plate, sprinkle with grated Bute Island Food Cheddar style Sheese. Then place the scrambled V’eggs on top, spinkle more Sheese, serve with veggies and enjoy.
Tofu only: 200 gms….24gms of protein, 236 calories, just 2gms of carbs.
