Yellow and Green Courgettes make a lovely Ratatouille.

I was given these lovely yellow and green courgettes from a friends garden. So already having an aubergine to hand, it was a simple decision. Ratatouille.

Place a tablespoon of water into a pan and heat up, add chopped onion and chopped garlic. Saute for a few minutes, add a tin of chopped tomatoes, whichever herbs you favour. I used Basil, Oregano and Tarragon. Chop the courgettes and aubergine into even pieces. Add any other veggies you wish, peas, mushrooms, beans etc. Cook for 30 minutes.

Thats it, simple, easy and healthy.

I served it here with Salad and topped with Bute Island Farm Grated Cheddar Sheese.

The amount I made was enough for 5 portions, it freezes well.

 

Tonight I had it served with 2 Linda McCartney sausages and beetroot picked straight from the ground earlier today.
