I opened a block of Tofu last night, my protein in take was little low, so this was the ideal solution.
I used coconut oil to saute chopped onions, mushrooms, yellow peppers, cherry tomatoes and asparagus. Then added the 1/2 block of tofu, using a fork break it up until it resembles scrambled egg. I added 1/2 tsp of turmeric, 1 clove of garlic, a pinch of Black salt, and some BBQ Smoke. It soon takes on a lovely yellow colour from the turmeric, just cook for a further 10 minutes. Ready. A huge 30 gms of protein.

Tonight, I used the other 1/2 of Tofu but to make a curry.
The process is similar, coconut oil, saute chopped onions, garlic, cumin, cayenne pepper, paprika, chilli ( I had a mixed mild curry powder so added a little), add peas, chopped tomatoes (straight from the plant tonight). Cut the tofu into small cubes, add to the pan with chopped asparagus and a squirt of tomato puree. Leave to simmer for 15 minutes. The tomatoes will make the sauce.
Dish up an enjoy, another 30 gms of protein and very tasty.
