Ginger cake anyone?

Straight into the recipe here.

2 cups of Spelt Flour

1 cup of Soya Flour

1 1/2 cups of coconut sugar and brown sugar mix

2 – 3 tsp ground ginger, or fresh if you mince it right down and like a more intense flavour

1/2 cup of mixed veg oil and coconut oil

1 tsp of egg substitute

3 tbsp of Molasses

1 cup of water or almond milk

1 tsp ground cinnamon

1 tsp all spice

and if you dare… a dash of chilli

This is very simple, put all ingredients into your food mixer or bowl to hand mix. Mix until you have a lovely smooth brown batter.

Pour into an 8″ baking tray lined with baking paper and cook on 180 for about 35 minutes.

When cooked stand on a rack to cool. I topped this with a tsp of coffee and 2 tsp hot water, then a little Billingtons icing sugar. Spread this on the top when cold and sprinkle some seeds on top. Cut into 16 pieces, 8 if you prefer.

To finish this treat off, I made us a soya latte each, Delightful!
