Not a recipe here as such as I just threw this together, I was going to make a spaghetti dish, but as often happens the dish evolved, my courgette became the spaghetti.
Chop half an onion and a clove of garlic, put into a pan with a little water and saute.
Then I added from the freezer sweetcorn and garden peas. Chopped up 4 large mushrooms. A few plum tomatoes and ribbon cut 1/2 a courgette.
Left it to cook gentle for about 10 minutes. Separately in a small bowl I put 2 tablespoons of @ButeIslandfoods original creamy sheese and 1 tablespoon of Pesto. Mix well and then stir into the veggies, make sure the sauce warms through and serve. I had this with a chunk of multi-grain seeded bread.
So tasty and so simple.
