My favourite meals are ones that are usually quick and easy to prepare and delicious and satisfying to eat.
When I got home tonight, I put the oven on and washed and pricked a baking potato, placed it in the oven, then popped out to the shops to get a few bit and bobs. On returning home, I started on my veg, cauliflower, asparagus and carrots all into the steamer.
Separately, I poured a cup of green lentils into a dish then added a tablespoon of Bute Island Food garlic and herb Sheese and a tablespoon of Nutritional Yeast and a sprinkle of garlic seasoning. Mixed it up well and the result was a lovely creamy green lentil sauce for pouring over your potato.
Once the potato was cooked, cut it lengthwise, then across, using kitchen paper squeeze the ends together, which makes the potato inside raise up and spread out. Use a little Pure or grated sheese and then pour the lentil mix over the top. Plate up your veggies and enjoy.
