As I have mentioned before I do not like hot porridge, so usually I overnight soak but occasionally forget. This morning I really fancied porridge, so here is what I did…
I put 40gs of oats into a pan to cook with a cup of water and a handful of frozen raspberries, I bought it to the boil then turned down to simmer and allow the raspberries to break down and turn the porridge a beautiful vibrant colour. Then removed it from the heat and left to cool.
Meanwhile ….
Into a beaker shaker (you can use a blender, but I was being lazy and didnt want to add to the washing up) I added 100 gms Alpro Go On plain, 50 ml of Alpro Cashew original and a tablespoon of cashew butter. Put the lid on, blast out your favourite piece of music and shake it up. It does take a bit of work but at the end of a 3 minute shake around the kitchen you are left with a beautifully creamy sauce.
I then sliced a banana and placed it slightly off centre into a shallow bowl. The banana is your barricade. Pour the oats into one side and the cashew cream into the there. Then decorate with whatever you have.

I used cornflower petal, pumpkin, sesame seeds and pine nuts, then a sprinkle of cinnamon.

A creamy velvety raspberry treat.
This is a great start to a day, and will be one of only two meals I have today.
