A huge plate of veggie power

This is another quick and easy dinner, its another go with the flow and use whatever you have. I do usually have a good selection of fresh veggies. So tonight, into a shallow pan, add a little water, 1 clove of garlic chopped. I used all the odd bits I had, a little cauliflower, a courgette, chopped onion, mangetout, baby corns, mushrooms, peas, plum tomatoes, add whatever herbs or spices you enjoy. I added a little Italian sprinkle, basil and a little chilli. Then I added some mixed beans and tomato puree. Leave it to simmer for a little while.

Meanwhile I put a serving of Red lentil pasta on to cook.

Once cooked, I served 1/2 of the veggies with the pasta. (the other half will be lunch at work tomorrow)

To finish off my Plant powered plate, I topped it with @buteislandfoods cheddar style grated sheese and then a little tomato sauce.
