A Variation of Scrambled Tofu

I have not posted anything for a couple of weeks, so tonight I have 2 meal ideas for you. As is always the case, they are both simple, quick and very tasty,

I occasionally fancy scrambled tofu and will have it with a full English Breakfast. However last weekend I decided to change it up a bit.

Start by breaking up a 1/3rd of a block of tofu into a flat bottomed pan, add garlic, herbs and mushrooms, a few cherry tomatoes. I added 1/2 teaspoon of Turmeric to add colour to the tofu. If I am having this as a breakfast I add a little black salt to give it an eggy flavour, but not this time. I had some quinoa and wild rice left in the fridge, and a little chopped tomato so I added both. Left it to cook, whilst I steamed brocolli, celery and carrots.

The whole meal took approximately 35 minutes. Full of goodness.
