This is the 2nd meal idea, another easy recipe. Although this takes a little longer as everything goes into the oven raw.
Start with some chopped onion and chopped tomatoes and place into a lasagne dish.
On the hob, heat up some Alpro Cashew original. Mix a little corn flour with water, once heated just before boiling add the corn flour mix and stir continuously to avoid lumps. Break up a couple of slices of Violife and add to the pan. Keep stirring then set to one side.
Meanwhile slice an aubergine and pepper, have a couple of handfuls of spinach ready washed and some chopped tomatoes and baby corn. Then start layering.
Lay aubergine on top of the onions, then some spinach and pour some of the sauce over. Add corn, tomatoes, aubergine, spinach and top again with sauce. Then add the sliced peppers on top. Place in the oven and bake for about 40 minutes.
I served this with avocado and some white beans. Then topped with mayo and sauce.
