I am a little amazed, my last post here was February 2018. Time…where does it go?
I have continued to cook up tasty, filling and healthy vegan dishes and have taken photographs along the way, so plenty to come, but other life events have taken up my time.
Shortly after my last blog we moved, same town just a little further inland. With the bonus of a garden big enough to grow vegetables, spaghetti squash and hundreds of tomatoes, a few aubergines and green beans…not bad for our first year, and of course being able to enjoy the evening sun at the end of a hard day at work, already dreaming of long summer evenings in 2019.
I did the 3 peaks in 2018. First, Scafell Pike in April when there was 2 foot of snow at the summit but absolutely spectacular 360° views. Then all 3, Ben Nevis, Scafell Pike (again) and Snowdon in August over 5 days, We got very wet and very cold on each one, and only able to see just a few feet. But a great sense of achievement. Just goes to show, no matter what time of the year you climb a mountain you are not guaranteed views.
I also went to Cool Britannia- the new music festival at Knebworth. 4 girls in a Mobile Home, what a way to do a festival, I remember the days of Glastonbury, crawling out from a tent after a bad nights sleep on a very uneven surface, poor washing facilities and diabolical toilets. This was very serious glamping. The only way to do festivals for me from now on.
Then with my partner in crime, we saw the Foo Fighters at the Olympic stadium. Incredible, they sure know how to party, I could have stayed and watched them all over again.
So with the usual day to day work and trials and tribulations, the year quickly disappeared on me.
So here we are, already 2 weeks into the New Year. So time to start sorting through all my photos and posting up a few recipes…but not today. I am making roasted cauliflower soup today to take to work this week for lunch. Here’s a little teaser. As always simple.
