Cold weather always makes me crave comfort food. Today I decided it was a vegan version of a Shepherd’s Pie sort of day.
This made enough for 2 of us.

First peel the potatoes and put on to boil, as you would for mash. Slice the brussels sprouts and place on a baking tray with oil. I used avocado oil. Put into a hot oven and bake for 15 minutes. When both are cooked, leave to one side to cool.

In a large frying pan, add the chopped onion to 2 tablespoons of water and simmer until golden. Then add 1 grated carrot, 1 celery stick cubed, mushrooms and garlic, simmer for 10 minutes.
Then add the herbs, I used Tarragon and Thyme, 1 tin of plum tomatoes, spinach and a cheeky glass of red wine.Leave to simmer for another 10 minutes until the veggies are cooked.
Add the green lentils, stir and then transfer into an oven proof dish.
Now mash the potatoes and roasted sprout together. I added a knob of Pure. Put the mash on top of the lentil mix. I made a basket weave…just trying to show off.
I served this with steamed broccoli. The cost of this meal was £5.00. I already had the herbs and garlic. A tasty, healthy, cheap meal.
