As I had a Bramley Apple still left, I needed to think of something to do with it. So here is what I came up with.

Never wanting recipes to be too fussy, I am sticking to my guns with this one.
Melt 75gms of vitalite or similar in a pan. Then pour this into a bowl, add 100 gms of flour, your choice which. 75 gms of demerara sugar, Flaxseed Egg (2 tablespoons of ground flaxseed with 5 spoons of water) and 1 teaspoon of vanilla or almond extract. Mix it all together well, if it is a little dry add a splash of almond milk. It should be cake mix consistency not a dough.
Peel and slice the apple. Into a bun tin, put cake cases, add a spoonful of the mix into each case. Then place 2 or 3 pieces of apple into each and sprinkle with cinnamon and ginger.
Spoon the rest of the mix on top of the apples to cover. Place into a hot oven, 170 degrees.
Cook for 15 – 20 minutes.

Because of the demerara sugar, it gives them a slightly crispy chewy top, hence the crumble.
Serve with ice cream or as I did here, with Alpro Vanilla.

Depending on your taste and sugar love, you can add or decrease the amount of sugar used, you can change the spices used. This is just a basic recipe for you to tweek to your own flavour preference. Experiment and enjoy.
