Tofu Tonight…

After a day of shopping, I was in need of something to recharge and reboot me.  I had the following in the fridge.

With the addition of garlic, herbs, black salt, avocado oil, Stubbs Liquid smoke  and chopped onion.

Start by placing the chopped onion in a flat pan with the avocado oil and garlic.

Chop the celery and courgette and add to the pan, with any herbs you like the flavour of. Leave to cook slowly for about 5 minutes.

Chop the red pepper and slice the mushrooms and add to the pan, the veggies will make their own juice, no need to add more. Add a little Stubbs.

Whilst this is cooking, prepare the tofu. I used just 100 grams. Dry on paper towel #Cheeky Panda if you have not tried them, give them a go. See below.

Using a fork, smash the tofu, season with salt and pepper, sprinkle with black salt and a little Turmeric. Add to the pan. Chop the cherry tomatoes and add-on top. Mix and leave for 10 more minutes on low.

I dished all of the above into a bowl, topped with some Mozzarella Style and some Vegan mayo.

Easy and healthy and quick.
