
We had a lovely house guest this week, my sister. So of course I shared my prepped meals with her. Soup one night and chilli another. This resulted in me being short of meals.
I opened the fridge to find a courgette, a small portion of cauliflower and broccoli, asparagus and a tin of cannelloni beans. Tomato puree and garlic.
I sliced the courgette and gently cooked it in a pan with a tablespoon of olive oil and water, 1 clove of garlic.

Cook gently until they start to just brown in places.

In the steamer cook up the cauliflower, Broccoli and asparagus until tender.


Separately, drain the beans, put them into a pan with a little coconut milk, a tablespoon of tomato puree and a sprinkle of Italian garlic. Heat through.


Now plate up.



I grated a little sheese over the broccoli. The result a very healthy tasty dinner, made within 30 minutes.
Total calories 600, Fats 60g, Protein 37g, Fiber 30g. Half of the calories come from the beans, as this was my main meal today, I ate the whole can.
