Friday night, no cooking

As its Mothers Day on Sunday I will be visiting my 93 year old mum. So, Meal prep will be happening Saturday this weekend, I think I may also make a few cupcakes to take to mum.

As I have nothing left of my ready made meals this week. It was time to find a healthy option.

2 slices of rye bread taken from the freezer and toasted, a small amount of Cathedral City plant based and a lovely ripe avocado. Sprinkles with Italian Garlic and a dollop of Mayo. For quick and easy, how much better can it get?
