Yesterday, guests for dinner, on the menu Chilli with sweet potato fries and a great mixed salad, I grated some of the Buddha hand on top. Delicious…..no photos 😦
However Dessert was the star. I have made this tart several times and with different bases, I have now discovered my favourite. Use your favorite flapjack recipe and line individual tart cases with about a cm layer, try to push it slightly up the sides of the case. Bake for 25 minutes, then take out to cool.

Meanwhile take 75gms of your preferred dark chocolate, melt this using a saucepan with boiling water and a glass dish on top. Once melted add 5 tablespoons of coconut milk. Mix together until completely combined. Take off the heat and leave to cool.

When both are cold, spoon the mixture into the tart cases. Place in the fridge to set.
Serve with ice cream, here I used Alpro coconut ice cream and raspberries and a little agarve nectar.
As this a treat and not something to eat to frequently, I am not even going to add Nutritional info….all you need to know is they are delicious, so enjoy!!!
