Avocado and Chocolate Mousse….

1 avocado, 1 cup of coconut milk, 1 tbsp of Alpro Go On, 1 banana, 1 tbsp of ground cocoao nibs, or dark cocoao powder. You can add any other flavours you like, vanilla, almond, mint….

Put everything into a blender and blitz until thick and creamy, transfer to individual serving dishes, cover with cling film and pop in the freezer. If you want a mousse texture only freeze for about an hour before serving.

Or leave for 2 or 3 hours and serve as an icecream, as I did here. Served on a bed of Mango puree, and alpro plain and drizzled with Choc Shot. Works well with Blackcurrant puree or Cherries. Whatever you prefer.
