Asparagus & Leek soup

I am always starting my recipe blogs like this, so forgive me, I am doing it again. This soup is so easy!

1 Leek sliced, 10 spears of Asparagus cut into 1 inch lengths, 2 handfuls of spinach and 2 cloves of garlic chopped.

Place leeks, asparagus and garlic into a shallow pan with 3 tablespoons of water, cook slowly until just tender. Make 300ml veg stock and add to the pan along with the spinach, cook until the spinach has wilted. Remove from the heat and leave to cool.

Depending on your blender either do in batches or one hit. I added a little coconut milk just before blending, which adds a real creamy texture. This makes enough for 2 servings.

I also added some more wilted spinach to the bowl when serving.

See how easy that was…all that is left is to enjoy.
