To avoid highly processed biscuits, I now make my own. Every weekend when I am meal prepping, I make sure a batch of cookies go in. Same recipe two versions this week.

1/2 cup of Crunchy Peanut Butter
2 tablespoons of maple syrup
1 teaspoon vanilla essence
1 cup of Almond Flour
Mix Peanut butter, maple syrup and vanilla essence.

Once well mixed add Almond flour. It should be a nice paste consistency that you can handle. I weigh out 22 g for each cookie, roll in your hand then flatten. Place on a baking tray lined with grease proof paper. This makes 12 cookies. Bake at 6 gas for 20 minutes. Leave to cool completely.
Use exactly the same ingredients as above, but this time add a handful of cashew nut, some pine nuts and mixed seeds. I made these slightly bigger, I got 9 cookies. Again cook for 20 minutes.

First cookies: 120 Calories each, 4 g protein, 5.5 g Net carbs, 9 g fat (healthy fats) 1 g fibre.
Second cookies: 180 Calories each, 6 g protein, 7.5 g net carbs, 14 g fat, 2 g fibre.
I have not calculated the cost of these.
